Winter Savory Salt

This is a supremely salty tasting salt, so use it sparingly or excessively depending on your appetite for saltiness. It’s heavy on the Winter Savory, a naturally “salty tasting” herb, so it just tastes a bit saltier than some of my other salts.

Comfortably numb captures my mood this mango season, my Green Garlic Parsley Salt captures my delight - especially atop this comfortably spring lemony chicken and artichoke herb pasta dish.

Today's breakfast for this stressed mango champion.

The multiflora roses ( baby rose/climbing rose)

I'm going to dry them out and make raspberry rose pepper salt ..... at least that's the plan for now. I was inspired by a #cocktail made using the roses, fermented white peppercorns, raspberries and wormwood and some vodka. (See @picoypero for those shenanigans)

My herb salts and my use of MALDON SALT explained @maldonsalt

I use all kinds of salts when making my herbal magic, but mostly I use Maldon flake salt. I landed on Maldon salt for a few reasons. First I’m able use a lot of wet ingredients with out the salt melting down. It also doesn’t burn as easily. (Yes, I found out that salt burns as I dry my salts at a higher temperature.) Maldon salt melds into hot, warm and wet foods at a lovely pace, taking a bit more time than granule salt, and in my opinion imparting a more co-mingled over all final taste without pushy salt forwardness

I use kosher salt to boil water and for few other things like baking but my go-to salt is Maldon for most everything else. If I could buy 5 gallon buckets of it, I’d be so happy.

My Rhubarb Anise Hyssop Strawberry Baking Salt is ready sold out. -and it's hands down a favorite in this collection - the idea of taking one of my salts and making it into sweet/herbaceous/slightly savory baking salt has been a big hit.

Here I'm adding it to a strawberry rhubarb jam that's gonna be used in a cheese danish.

#Chiveblossoms are bursting forth (as things must!) and I’m so happy. Their soft garlicy essence is the perfect little topper for my eggs, salads, grilled asparagus and just about everything. I adore them and will also make some herbal salt using them to preserve what’s here before they fleet on and bone something else (as things do).

All this is going into a big spring salad. If you're not loading up herbs in your salad you are really missing out. Garden or no garden.

When I was a little girl in southern ca my dad and I would eat avocadoes with Lawry's garlic salt with a spoon.

@myherbalroots version of that is way more delicious and ultra nostalgic!

Spring chamomile season!! Not only do they help control pests and attract beneficial insects, chamomile has serious anti fungal and antibacterial properties farmers have long planted it in apple orchards. I dream of a chamomile lawn.

There are so many different varieties ranging from short to tall

They make beautifully sweet smelling displays around the house.

The spanish word for chamomile is manzanilla, which means little apple. Most describe chamomile flowers as sweet and apple like, i dont personally sense the applesque quality as robustly as others do i do think its slightly fruity. I think its more unique and specific to itself -honey-sweet, herbaceous, earthy and incredibly perfumy, in a very gentle way.

It's the yellow centers that have all the flavor. The petals are bland on their own, slightly sweet.

They flowers as a whole are super fragrant and i find, like drinking the tea, the scent of the flowers calms my nerves and relaxes me, which is why i love them in bouquets.
The stems and leaves are also edible and have a pleasant grassy, slightly bitter flavor.

I of course use them in all kinds of sweet and savory concoctions. My favorite sweet pairing is probably chamomile and strawberries, Strawberry Chamomile Hand Pies to be specific.

My favorite savory pairing is chamomile (whole plant) and carrots- Roaster Carrot and Chamomile Leaf Salad with Chamomile Chili-Homey Dressing.
